Kakiage Soba


"Kakiage" is a type of Tempura which is mix of small cut ingredients that are deep fried with a Tempura batter. Frying the kakiage requires some technique.  Tempura in general is not very easy to do well, because they need to be very crispy and light.  In Japan, people usually eat out tempura at tempura bars, but they are very expensive.  Tempura is like Sushi, it requires years of practice to be a master.

最近の「天ぷら粉」はカラッと揚がりとてもよく出来ていると思う。それは単品の場合はよいのだが、「かき揚げ」には使えないことが判明。カラッと揚げるように出来ているためか、ばらばらになってまとまらない。ということでかき揚げの場合には昔ながらに作る。
