Back from Japan



Dear readers, I've came back from vacation in Japan.  I've enjoyed plenty of Japanese summer vegetables and delicacies.  I'll continue my cooking postings from this week.  Please come visit me sometimes!

Tomates Farcies


This is fresh tomato that removed it's seeds stuffed with chicken salad.  I made this out of  a whole chicken roast leftovers.  When I roast a young chicken, usually I enjoy it for about three days.  First the chicken itself then I make some salad or other dish out of leftovers, then I pour the water in chicken bones to makes chicken stocks, or cook with some rice to make rice soup (congee).

これは若鶏のローストの2日目に作ったチキンサラダをトマトの種をくりぬいたものに詰めた。サラダはドライトマト、ケイパー、パプリカのローストをヴィネグレットで和えた。

私は通常チキンのローストを1日で全部食べきれないので3日くらいに渡って楽しむ。1日目はそのまま、2日目はサラダやそば粉のクレープに包んだりする。3日目は残った骨に水を注いで餅米を少量足して鳥粥にしたり、チキンスープにする。骨までしゃぶるので鳥はオーガニックを使用したい。

Entrecote


This is "Rib eye" steak.  My husband and I are very much the "red meat lover" so I make the steak sometimes.  Rib eye is very popular part yet it's not my favorite part, because it's slightly  fat for me.  In Hong Kong, Australian beef is very common and they are very good quality.  Though I still think American Angus beef taste the best in the world.

First point of cooking the steak is to have a good quality steel pan.  You could never do the good steak with crappy pan.  The second step is to bring the meat in room temperature.  Don't cook the meat right out of the fridge.  It'll shock the meat and you'll loose all the juice inside of the meat.  The point of cooking the meat is "how to retain the juice inside the meat".  Then most of the chefs had developed the technique with years of training.

私達は肉好きなので、よくステーキを焼く。これは「リブアイ」だが、この部位は私達には少し脂っこすぎるので、この部位を焼くのは稀だ。肉は大好きだが、脂身が好きでないので淡白な肉を選ぶ。

私の個人的なランキングではアメリカのアンガスステーキが一番美味しいと思う。熟成した肉はとても味わい深い。香港に多いオーストラリア産の肉も悪くない。フランスの牛肉もそれに似ている。私的には和牛は脂が多すぎるので論外。高価だが和牛は香港でもとても人気で、最近では豪産の和牛も大人気のようだ。

肉を焼くコツは先ず、よい質で厚手の肉焼きフライパンを使う事。テフロンパンなどでは厚みのある肉は決して美味しく焼けない。次に肉を室温に戻しておくこと。冷蔵庫から取り出して直ぐに焼いてはダメだ。冷たい肉を焼くと肉にショックを与えてしまい、肉汁が逃げる。肉焼きの最も重要なポイントは「いかに肉汁を肉の中にとどめるか」につきる。肉のうまみは「肉汁」だからだ。

前にも書いたが、これは容易な技術ではない。何年もかかって習得出来るもので、シェフ達はそれぞれ研究した独自の方法を持っている。

Cheese cake!


This is my mother's proud recipe of baked cheese cake.  It's not that she invented it but she learned it from her baking teacher about 30 years ago.  Since then, all of my family member mastered this cake making except my father.  This is very simple yet taste amazing.

Japanese people love baked cheese cake.  There are many types of cheese cakes and I believe this type of cake is invented in the U.S.  Yet it's much lighter than NY cheese cake.  In France it calls "Tourteau fromager" but this is very different from my recipe.

これは私の母が30年程前にケーキの先生から習ったレシピ。材料はとてもシンプルで重くもなく軽くもなく、感動的に美味しい。日本で人気タイプのふわふわのものではない。子供の頃から家族みんなの大好物で、今では父以外は皆作れるようになった。

チーズケーキは昔から日本でも大人気のケーキだと思うが、意外にパティスリー発祥のフランス菓子には同様なものがない。フロマージ・ブロン(生のチーズ)にフルーツのクーリをかけて食べる方が多く、焼いたケーキ「Tourteau fromager」は正直、全く美味しくなくて驚いた。

Tuna Steak













The best way to eat Tuna is of course as Sashimi but also rarely seared Tuna is also very tasty. Season the Tuna with salt and pepper and sear it in non stick pan.  If your Tuna is fresh, try not to cook through.  You have to be very aware of cooking time, because the fish convey the heat much faster than meat.  I would say two minutes each side.  The sauce is soya sauce and sesame oil, you can also add some lemon juice.

「まぐろのステーキごま油ソース」まぐろの両面をシャシャっと焼いて、出し醤油+ごま油のソースをかけた。二十日大根のピリ辛さがとてもよくマッチする。日本にだったら、しその葉の千切り、ミョウガなどと一緒にまとめてもよさそう。今流行の「食べるラー油」なんかも合いそうだ。

Couscous and Avocado Tartar


This salad is combination of couscous, avocado, a boiled egg and Tobiko caviar.  Seasoning is sushi vinegar, white soya sauce and olive oil.  Tobiko caviar   have very special texture and they are relatively inexpensive compares to other caviar, I used this often.

トビコは飾りとしても可愛らしいし、食感も好きなので時々買うが、早く食べなければならない。最後はアヴォカドや刺身と合わせてタルタルサラダにすることが多い。これはとびこをクスクス、アヴォカド、ゆで卵と合わせて、レモン、寿司酢、白醤油、オリーブオイルで味付けした。つぶつぶした食感を楽しめる楽しい一皿となった。

Chicken Liver with soya sauce














This is saute of Chicken liver marinade in Soya sauce, sake, mirin ground ginger and garlic.  This green pepper is Japanese green pepper.  It taste slightly bitter and it goes very well with Chicken liver.  I think it can be replaced with western green pepper.

It's important to saute the vegetable separately from the chicken liver because it'll become very messy.  I saute the pepper first in the pan with olive oil, then remove them, then start fry the marinated livers.  Don't over cook the liver otherwise it'll become very hard.

「鳥レバーとピーマンの炒め物」は夏バテに効き目抜群な一品。先ず、レバーを醤油、酒、みりん、にんにくと生姜のすりおろしに30分くらいマリネする。炒める前にレバーをマリネ液から上げて水気を切る。

先にピーマンを少量の塩で炒めて、別の皿にあけておく。レバーと一緒に炒めると、見た目の悪い仕上がりになる。次にレバーを炒める。新鮮なものは半生でも大丈夫だが、そうでないものはきちんと火を通すようにするが、炒めすぎないこと。レバーをフライパンから取り出し、マリネ液を入れ煮詰めてソースにする。最後にレバーとソースを絡めて、ピーマンと一緒に盛付ける。レバーとマリネ液を一緒に炒めるとぐつぐつと煮込むことになり、レバーが固くなる。

Chichen and Egg Salad


This is just a simple salad with steamed chicken filet mignon and boiled eggs.  The dressing is vinaigrette with "moutarde a l'ancienne".  I think you can also add tomato, cucumber or avocado.

「鳥と卵のサラダ」。親子にした意味はあまりないのだが、ネーミングがかわいいかな?と思って。鳥はささみを蒸したもので、これにキュウリくらい足した方がよかった。最近香港もとても暑くなってきたので、家でもサラダ系の料理が多くなった。ドレッシングはヴィネグレットに粒マスタードを少し加えた。ヴィネグレットはディジョンマスタード、ワインヴィネガー、塩こしょうとオリーブオイル。酸味を減らしたい場合は米酢を使ってもいい。これは空いたマスタードの瓶に大量に作っておくととても便利だ。

私は市販のドレッシングは買わないようにしている。基本的に酢とオイルがあればドレッシングになるので、面倒なことはない。和風にしたい場合は醤油や出汁を基本にして、すりおろしたタマネギや大根、生姜、ごま油で変化をつければよい。フレンチでは基本のヴィネグレットをりんご酢、フランボワーズ酢やレモン、くるみオイルなどで変化を付ける。何より、あまり色々加えたり、変化させるよりシンプルに上質な酢、塩、オイルがあれば他はあまり必要ない。

市販のドレッシングにはやはり多くの化学調味料や甘味料が入っているので、味が濃く、応用しても素材の味が負けてしまう。私は化学調味料を全面的に反対している訳ではない。少量を使えばよいが、舌が慣れすぎてしまうと、それ無しでは旨味が感じられなくなるので要注意。特に和食や中華はそれらに頼りすぎてしまいがちだ。

Wiener Schnitzel


This is my husband's favorite dish.  However because veal is very expensive in Hong Kong, I usually make this with Chicken breasts and I pound then very very thinly.  Chicken cutlet is very tasty as well yet when you try the real veal, you'll realize it's very different.  For this dish, you need to use very small crumbed breadcrumbs.  You can make this with your bread leftovers but I usually use American breadcrumbs.  Japanese breadcrumbs are too rough for this delicate meat.

「子牛のカツレツ」は夫の大好物だが、子牛は香港でとても高価なので、私はいつも鳥胸肉を薄くのばしてカツレツにする。久々に本物で作ってみたら、やはりかなりの違いを感じた。

私はこの料理のポイントは「パン粉」だと思う。かなりきめが細かいものを使わないと繊細な子牛の肉に合わないと思っている。自分でパン粉を作るのがベストだが、市販のものではアメリカのパン粉がいい。日本のパン粉はかなり目が荒いのでおすすめしない。またこれには絶対にレモンを忘れてはいけない。

Pasta variation -Anchovy base













Anchovy with olive oil makes a great pasta sauce.  This sauce is made from saute of garlic with anchovy, sun dried tomato and can of green peas.  I made this when my fridge was very much empty, but you can make this with preserved foods.

これはアンチョビをガーリックオイルでソテーしたものをベースとしたパスタで、サンドライトマトと缶のグリンピース入り。保存食だけで、手軽に出来るパスタ。買い物に行くのをさぼって冷蔵庫が空っぽになった時にとっさに作ったものだったが、かなりいいコンビネーションだった。オリーブオイルににんにくを炒めると同時にアンチョビを加えると、アンチョビがオイルに溶け出して、パスタ全体に回るようになる。
