Salade aux figues et jambon de parme


"Prosciutto and Figs" are great combination.  You can also make simple aperitifs with figs wrapped with prosciutto.

「いちじくと生ハムのサラダ」いちじくと生ハムのとり合わせは割りとよく知られていると思う。いちじくを生ハムで巻いてアペリティフにしてもいい。

Sasami no Miso yaki

























This is chicken filet mignon marinated in Miso paste and wrapped with Shiso leaves.  Shiso leaf has a flavor similar to basil.

「ささみの味噌漬けしその葉巻き」は、「ささみ」のぱさぱさ感が苦手な方にもおすすめ。しその葉を大量に頂いた夏に作った料理。先ずささみを味噌を酒で割ったつけダレに付け込む。お好みで、みりんなどの甘味を足してもよいと思う。しその葉で包んでテフロンパンで焼く。味噌漬けの肉は焦げ易いので蓋をしながら蒸し焼き加減に火を入れていく。外が焦げそうで中に火が入らない場合はお玉半分くらいの湯を足すとよい。

Bean sprouts fry with Touchi

























"Touchi" is Chinese seasoning.  I think the Chinese would say "douchi".  These are fermented black beans and they are great seasonings for stir fry.

I added prosciutto to bean sprouts for the taste and flavour.  It's important to use a good wok and very strong gas to cook Chinese dishes.  You have to prepare everything on your hands before putting anything in the wok, then fry them very very quickly.

「もやしと生ハムの豆豉炒め」野菜の炒め物に豆豉を使うと、こくが出てとても美味しい。今のアパートのガス台が中国仕様で、かなりガスが強い。また中華鍋をガッチリ掴んで、ガスがよくあたるように出来ているので、欧米の器機より高さが高い。気のせいか、一気に私の中華料理の腕が上がった感じがする。

Potage au broccoli

























This is a very simple broccoli soup.  First, I boiled the broccoli in salted water and then drained them out.  Then saute a slice of onions and cook them in consome or chicken stock until the onions become tender.  Add the broccoli toward the end of its cooking but not cook the broccoli with the soup too long, otherwise, you'll lose its green colour.  It's important to make them smooth by the bar mix very well.  Season the soup with salt and pepper, you can also add tiny pinch of cream at the end.

「ブロッコリーのポタージュ」はとても簡単にできるポタージュ。先ず、ネギかタマネギのスライスをバターかオリーブオイルでソテーする。ブロッコリーは青臭さを抑え、色を保つ為に別に柔らかく塩ゆでする。オニオンソテーにチキンストックかコンソメを足し、柔らかくなるまで煮込む。茹でたブロッコリー入れて少し馴染ませる。しかし、ここで長く煮込むと色が悪くなるので注意。

バーミックスなどのブレンダーで全体をスムーズにする。野菜がきれいにぺーストになるまで丁寧にブレンドすると上品なポタージュになる。最後に塩こしょうで味を整え、好みで少量のクリームを足す。

Imo ni



"Imo" translates to potato in English but it usually means "Yam" in Japanese cooking.  Yam is a very popular and common ingredient for Japanese food and the way of cooking differs from region to region.

As you may know, Japan is a geographically very long country, so the local foods and seasonings are very different from north to south and east to west.  In my view, the richest and the finest food culture are the ones from "Kyoto" since Kyoto had stood as the capital of Japan where the emperor resided for so many years before the Meiji period.

Soya sauce is one of the main seasoning of Japanese food; something people use every day, but the sauce and the usage is very different from the West; meaning the Kansai region (Osaka, Kyoto, Nara, Kobe etc.) and southern there, and the East means Kanto region (Tokyo and regions north).

West cooking usually uses "Light soya source" and East cooking uses "Normal soya sauce". Light means soya sauce which is not dark, more like a light beige color.  To cook this Yam dish, soya sauce is not the only seasoning, but the East style fishes in a dark colour as in the upper photo, and the West finish is the bottom one.

「芋の煮っころがし」写真上は関東風、下は関西風に作ったもの。貴方の地域、ご実家のスタイルはどちら?私の実家は九州熊本。九州味は京風とも違って田舎臭いのだけど、煮物は全般に薄口醤油で仕上げることが多いと思う。(母方の祖父は関西人なので、もしかしたら母の料理も関西よりかもしれない)

なぜこんな東西比較をしているのかと言うと、ある日NHKの番組で、北関東あたりの芋の産地のおばちゃんがとても美味しそうなツヤツヤした「イモの煮っころがし」を串刺しにして配ってるのを見た。それが私は見た事ない濃い茶色(醤油色)のイモの煮で、とても美味しいそうだったので料理本頼りに作ってみようと思った。

私自身は関東の家庭料理を食べた事はあまりない。写真のイモ煮はそれぞれ別の日に作ったものだが、その関東風には失敗してしまった。慣れない醤油の使い方をしたからだろうか、レシピが悪かったのか、舌が慣れていないからだろうか、何かピンと来ないものになってしまった。芋は鮮度が重要で、香港に輸入されているものが既に美味しくないというのも一つある。関東出身の方、是非その極意を教えて下さい!

Pasta alla carbonara au chou fleur


This is "Carbonara" pasta with boiled cauliflower.  Cauliflower matches perfectly with cream with parmesan cheese sauce.  I also used ham for this pasta instead of bacon.  Normal carbonara is pasta without any vegetables but this complement it perfectly.

「カリフラワー入りカルボナーラ」これは茹でたカリフラワーをカルボナーラに加えたもの。カリフラワーがクリームとパルメザンチーズソースに素晴らしく良く合う。カルボナーラは大好きなソースだけど、野菜無しでソースもかなりこってり。しかしカリフラワーを加えることで、若干気休め的に軽くなる。野菜を少しでもとれるのも嬉しい。

カリフラワーのゆで汁を少しとっておき、パスタとクリーム、卵黄がボッタリしたら加えて調節するとよい。カリフラワーはあまりゴリゴリの固めに茹でず、少し柔らかめの方が全体に馴染んでよいと思う。

Mix Salade

It's good to eat plenty of vegetables.  This mixed salad contains avocado, radish, tomatoes, haricots, and grilled ham.  I often make this type of "Salad with everything" with grilled chicken.  You can also add some boiled potato.

野菜不足を感じた時は夕飯をこんな「何でも入りサラダ」にすることが多い。これはアボカド、ラディッシュ、インゲン、トマトとハムのグリルを角切りしたものを入れた。

ところで私は最近この「カタギ有機いりごま金」というのにハマっている。このごまの美味しさは香ばしくて格別!ナッツのように味が濃くて甘いので、最近は和え物から和風パスタまで何にでもじゃんじゃんふりかけている。とても美味しいごまだが、このお店のサイトによると、日本産という訳ではないようだ。

Avocado with Tofu

























This is a super easy starter, more like a company with drinks.  Avocado and "momen tofu" hard tofu tossed with lime juice, sea salt and sesame oil.  If you have choices, it's better to use good-quality of tofu and sesame oil.


「アボカドと木綿豆腐のごま油和え」これはアボカドと木綿豆腐をそれぞれ角切りにして、塩、ライムジュース、ごま油で和えたもの。淡白だけど、さっぱりしていて美味しい。塩やごま油は質の良いものを使うといい。日本ではすだちやかぼすの香りを足すとよいと思う。

Gratin de Macaroni aux champignons sauvages










This is very simple "Gratin de Macaroni".  French make this plate in the season of wild mushrooms.  My favorite mushroom of this season is "chanterelles".  They are very rich in flavor and not as expensive as "cepe".  I think chanterelles goes very well with this dish.  Unfortunately they are very expensive here, so I used small portobello mushroom and dried chanterelles and porcini.

「野生のキノコのマカロニグラタン」秋はキノコの季節でフランスのマルシェにも沢山の野生のキノコが出回る。この料理には「シャンテレール」というキノコなどが良く合うと思う。ところでフランスにも日本の松茸のような、キノコの王様があり、「セップ茸」「モーリ茸」などはとても高価。残念ながら写真のものはここで比較的安価に手に入る、「ポータベロ」とシャンテレールの乾燥を戻したもの。

ところでこのようなグラタンを美味しく作るコツは、全てを混ぜないことだと思う。始めにマカロニを敷き、次にキノコのソテーをのせ、最後にベシャメルソースをかけ、上からチーズを少量ふりかけてオーブンで焼く。マカロニグラタンはベチャっとして子供っぽい料理だが、このように層にすると上品な大人の料理になる。入れる材料もキノコだけにして、その香りを引き立てた方がよい。

Shirataki no Nimono


I don't think many people know about "Konjac" if you've never lived in Japan.  This is very much Japanese specific food, even though wiki says that this exist around Asia but I've haven't seem it much but in Japan.  Konjac is made from a plant, and it has texture similar to jello yet it's very special.  To be honest it's not my favorite food, but I has no calories and good for health and I miss it sometimes.  The one of the photos is shaped in noodled styles.

「白滝の煮物」夫はこんにゃくなどの変わった食感のある日本の食材を好まないため、こういう料理を作るのは独りの時が多い。白滝を出汁と薄口醤油で煮てしばらく置いたもの。こんにゃく類ははっきり言って私もあまり好きではないのだけど、カロリーも低いし、普段滅多に食べないので作ってみた。たまに食べると美味しい。

Beets salad


This is potato salad with boiled beets.  Beats has a high content of sugar but it tastes very well as salad with mayonnaise.  This is beets with potato salad and Japanese tobiko caviar.

「ロシア風ビーツサラダ」典型的なロシアの家庭料理の一で、人参、グリンピース、ジャガイモをベースとしたポテトサラダにビーツとトビコを加えてマヨネーズで和えたもの。本来はこれにキャベツの漬け物が入るのでビーツの甘みと漬け物の酸味と塩が調和してとても美味しい。ロシアのキャベツの漬け物はドイツのザワークラフトとは違っていて、日本の浅漬けに近い。

ビーツは主にロシア、北ヨーロッパや北米でもよく見かける野菜。味は基本的に大根だけど苦みは無く、滑らかで甘みが強い。日本のカブとも少し違って結構固い。ビーツという野菜はその土地に供給が無ければわざわざ輸入ものを買うほど美味しいものではないが、その色がとても鮮やか故、たまに使って楽しい食材。この野菜を最高に活かした料理は以前紹介したボルシチ

Pasta variation -soya sauce base











This is Italian pasta seasoned with light soya sauce.  I love pasta any way of cooking.  Of course it tastes the best with tomato sauce, but it can be with soya sauce!

First to saute the vegetable in good quality of olive oil with garlic and set them aside.  Then added ground pork with spring onion and I seasoned with light soya sauce with dashi.

「豚ひき肉と野菜の和風パスタ」読者の皆様はパスタ屋の「ピエトロ」はご存知だろうか?本店が福岡にあるパスタ店で九州には何処にでもある。ドレッシングで有名になったので、聞いた事がある名前かもしれない。私はおませな中学生のころからよくここに通っていたのだけど、昔あった「シチリアーノ」というパスタが忘れられない。

それはペペロンチーネになすのガーリックソテーがどーんと乗ったものだった記憶がある。これはそれに豚のひき肉を加えて、醤油を入れて和風に作ってみた。

Supreme de Volaille aux champignons















This is Chicken breast rolled with chicken fillet mignon and mushroom mousse.  When you buy a whole chicken breast, it usually comes with the fillet, so I grounded that part in the food processor with some cream and mixed with saute of mushroom and eshallot.

Pound the breast with meat pounder then roll up the mushroom mixture and tide with the strings.  Cook in the le Creuset  with the lid on.

「鶏スプリーム、キノコのムース巻き」は一見面倒に見えるが、手際を覚えればそうでもない。こちらの鶏胸肉は「ささみ」が一緒についてくる事が多いのでその肉をキノコのみじん切りと一緒にムースにして巻き、ルクルゼで蒸し焼きにした。ファルスにはレーズンをワインで戻したものを加えた。

フランス料理は少し手間をかけたものになると、必ずこの様な肉を肉のファルスで詰めるものが多い。付け野菜は缶詰のグリンピースをベーコンと少量のクリームでサッとに煮たものと人参のグラッセ。

Kampachi tartar with Yuzukosho


I think "Kampachi" is one of the known and popular fish for sashimi.  It's fatty as tuna fish's "toro".  I assume because it's a large fish and it can be frozen same as Tuna, so easy to be transport overseas as well.

I like this fish as sashimi if it's very fresh, but it's not my favorite because of it's texture and the smell.  Yet this sashimi is taste very good as "Tartar".  I mixed with some spring onions, Yuzukosho, lemon juice, soya sauce and some sesame oil.

「カンパチのゆず胡椒タルタル」カンパチは刺身としては本当に新鮮だと美味しいが、概して生臭くて脂っこくていまいち。養殖が殆どということも刺身としてあまり美味しくない原因。しかし、ゆず胡椒を入れて「タルタル風」にすると、その脂がプラスに転じてとても美味しくなる。味付けは、あさつき、しその葉のみじん切り、ゆず胡椒に薄口醤油少々とレモン汁にごま油をほんの少し。

Cheese steak










This sandwich is called "Cheese steak" and this is a speciality of Philadelphia.  You can often find them at NY street vendors.  Many people queue for the popular stands at lunch hour.

Saute thin sliced beef, onion and bell pepper in olive oil and add your favorite cheese.  I think the original uses American cheese, but I prefer Emmental.  I think any kind of pizza cheese works as well.  This is easy and good variation of sandwich if you're tired of ham and cheese.

これはフィラデルフィア発祥の「チーズステーキ」という名前のサンドイッチ。薄切りの牛肉、タマネギとピーマンを炒めて上からとろけるチーズをかけたもの。ハムとチーズのサンドイッチに飽きた時は、こういうバリエーションもいい。

Kaki no Shabu-shabu salade










"Kaki" is East Asian fruits and there are many in Japan.  The fruits is seasonal of this time, around November.  It has certain sweetness but also has strong tannin.  With recent bio technology, the tannin has lessen.  Because of this special taste, I think it goes very well as salad.

"Shabu Shabu salade" is salad with boiled thin sliced meat, pork or beef.  I used baby spinach and sesame sauce for the dressing.  This whole combination of kaki, pork, baby spinach with sesame goes very well together.

「柿のしゃぶしゃぶサラダ」ベビーほうれん草と豚しゃぶに「柿」を加えた。柿の軽い渋みと甘みがゴマだれの豚しゃぶサラダに最高によく合う。

ところで、最近の日本の柿は随分昔と変わったと思う。形は真四角、種無しで渋みもまろやか。美味しいのだけど、もう少し野生的な味を残してくれてもいいと思う。一方で過去に美味しそうな柿を香港のローカル市場で見つけて買ってみたが、これは渋すぎて食べられなかった。

Boeuf en daube


I still don't know what is the difference between "Boeuf Bourguignon" and "Boeuf en Daube".  I usually make "Boeuf Bourguignon" as I leaned in France, but this time, I tried this recipe of Boeuf en Daube from French chef  Christian Delouvrier who used to be the head of "Lespinasse" in New York, which seems that it's closed now.

The key of this recipe is long marination.  I marinated the beef chuck in red wine with onion, garlic, carrot, celery and bouquet garni for five days in the fridge.  You might find it surprise for such a long marination but it really enhances the flavor.  As long as you keep the meat in the fridge, it doesn't get bad.

Strain the beef and the vegetable from wine then separate beef and the vegetables.  On the side, boil the wine in small pot, remove the scums.  Dry the meat with cooking paper then brown the meat only the outside with butter.  Remove the meat, then saute the marinade vegetables in the same pot then add some flour.  Put back the meat to the pot of vegetables, then add pure of tomato, tomato paste, cube of beef stock, boiled red wine and some fresh red wine.  Slow cook the pot for two to three hours.

「ブフオンドーブ」というフランス式の牛肉のワイン煮。実はこれと「ブフボーギニョン」(ブルゴーニュ風ワイン煮)との違いがいまいち良く分からない。このレシピの鍵は肉を長くマリネすること。これは牛(肩肉がよい)をワインとタマネギ、人参、セロリ、にんにく、ブーケガルニに冷蔵庫で5日間漬け込んだ。冷蔵庫に入れておけば肉は1週間程ワインにマリネしても問題ない。驚く程肉の質感がしっとりし、ワインが染み込んで美味しくなる。

その後はマリネ液から肉と野菜類を分けて引き上げる。一方でマリネのワインは小鍋で一煮立ちさせ、灰汁を除く。肉はペーパータオルで水分を除く。始めにバターで肉の外側だけを焼き、取り出す。次に同じ鍋でマリネの野菜をソーテーし、最後に小麦粉を絡めて炒める。

その鍋に肉を戻し、トマトピューレ、トマトペースト、ビーフストック(固形、フォンドボーがあれば尚良い)、湧かしたワイン、更に赤ワインを足して入れて2、3時間極弱火で煮込む。

Salmon no zuke don


"Zuke" means sashimi marinated in soya sauce and mirin.  This is usually made with Tuna sashimi in Japan.  In Hong Kong, salmon sashimi is very popular but I don't like much the taste of salmon as raw, so I marinated with "zuke" sauce with lot of wasabi, ginger and onion.  I also added drizzle of sesame oil as well.  The rice is with vinegar, same as sushi rice.

「サーモンの漬け丼」私は個人的にサーモンの刺身が苦手なので、漬けにしてみたら生臭さが和らぐかな?と考えた。醤油とみりんの漬けタレにわさび、生姜とタマネギのすりおろしを加えた。先ず、醤油とみりんを一煮立ちさせる。生姜などを加える前にこのタレを少し別にとっておく。韓国風にしてみようかと思ったが、生のにんにくはかなり苦手なので、生姜とタマネギにしてごま油も少し加えた。

ご飯は酢飯でいりごまを混ぜ込んだ。上には貝割れ大根の変わりに、二十日大根の塩揉みをのせた。最後に残しておいた醤油タレを上から回してかける。夫にはとても好評だった。日本に居る方にはやはりマグロで作ることをおすすめする。アヴォカドを添えてもいいかと思う。

Courgettes farcies au thon


"Courgette stuffed with tuna" is very reasonable and easy dish.  First, to make any farcis, you need to have a mellon baller.  Spoon is not sharp enough to scape the vegetable cleanly.

Scarp the courgette and minced the insides with olive oil.  Add some minced mushroom, black olives and a can of tuna and stuffed the courgette.  Put some cheese on top then baked in the oven.

「ズッキーニのツナファルシ」は、お安く出来てとても簡単な料理。メロンボーラーを使ってズッキーニをくり抜く。上記リンクのメロンボーラーは野菜の詰め物を作る時にはとても便利な道具。スプーンは先が丸くなっているのでやりにくい。

くり抜いた身をみじん切りして、ほんの少量のオリーブオイルで炒め、さらにキノコと黒オリーブのみじん切りを加える。それらとツナ缶を混ぜてズッキーニに詰める。チーズをふりかけてオーブンで焼く。

Pain Perdu au cacao


"Pain Perdu" is "French toast" in English.  I asked my husband many time before if he liked "French toast" and he didn't know what was the "French toast" even as French person.  After while I found out the word "Pain Perdu".

 This is a perfect way to consume bread, especially Baguette left overs.  Usually, the ingredients are eggs, milk and some sugar.  I add some cocoa powder and melted chocolate in the end.  I also added some dried raisins soaked in dark rum.  It's important to let the bread soaked in the milk mixture well, then cooked in the oven.

「ココア味のフレンチトースト」余ったパン(バゲット)をデザートに仕立てたもの。「フレンチトースト」とはもちろん英語でフランス語では「パンパルュデュ」この事は最近知った。過去何度も夫に「フレンチトースト好き?」と尋ねても「フレンチトーストって何だろうね、知らないよ」と言われて、フランス人のくせにフレンチトースト知らないの???と思っていたが、謎が解けた。

ベースはフレンチトーストと同じ、卵と牛乳に砂糖を加えたものにココアを足した。液を沢山作ってパンを浸し、一晩くらい冷蔵庫で浸透させた方がよい。最後はチョコレートを溶かしたものとレーズンをラムに浸しておいたものを混ぜ込んで、アーモンドスライスをふりかけて、オーブンで焼いた。キャセロールの底にたっぷりバターを塗り、少々のバターの細切れをパンの間に何カ所か落とすとよい。

Agi no Tataki -Somen age


"Somen" is very thin Japanese noodle.  I crushed the noodle to make the crust of fish balls.  The fish balls are made from "Agi".  This fish tastes similar to sardine, but much more delicate.

Filet the fish and chopped into "tartar".  Then season the fish with light soya sauce and add some minced ginger and spring onions.  Shape the tartar in small balls, then cover with the "Somen" noodles.  Fry the fish balls in the oil until it cooks.  

「鯵のたたきの素麺揚げ」素麺衣はチャチャッと出来るし、食感もよくて魚にはぴったり。鯵はやっぱり刺身や生のたたき、塩焼きが美味しいと思うが、ここでは冷凍ものだったので、揚げ物にした。

鯵をおろしてたたき、生姜とネギのみじん切りを加える。薄口醤油、少量の酒で味付けして練る。少量の片栗粉でつなぎ、形を作って素麺を全体にまぶす。適温の油でさっと揚げる。

Chicken Teriyaki Wrap


This is very common and popular American food.  You can find this type of warps at any delis in New York.  I think that the wraps come from Mexico or South America.  They are very tasty and low in carb.

"Chicken Teriyaki" is originally a Japanese dish, chicken cooked in soya sauce and sugar.  This sweet and salty tastes match well with Avocado and some mayonnaise.  The wrap includes Chicken, avocado, cucumber, tomato and alfalfa.

「チキンテリヤキのラップ」ラップはアメリカではとてもポピュラーなランチで、中身のバリエーションが色々あり、これは人気のあるテイストの一つ。ラップ自体はメキシコや南アメリカ辺りの料理から来たものだと思う。その皮自体にも様々なフレーバがあり、パンより炭水化物率が低いとかで、ダイエットにもよいという話を聞いた。

そういえば、「チキンテリヤキ」は海外の怪しげな日本食レストランに必ずある料理だが、日本ではあまり無いものだと思う。強いて言えば「鶏のくわ焼き」か?

ラップ生地で鶏のくわ焼き、アヴォカド、キュウリ、トマト、アルファルファにマヨネーズを入れてを巻いた。アヴォカドと鶏の甘辛味が良く合う。

Endives braisees au Roquefort











This is a great side dish for any meat dish.  I love Endives the flavor, texture and its slight bitterness.  I think that the endive tastes the best as gratin but it takes some time, so I cooked in cream and roquefort cheese.

「アンディーブのロックフォールブレゼ」大好きなアンディーブはフランスでは5本で1ユーロくらいで売られている野菜だが、とにかくここでは高いのであまり買えない。この貴重な2本は本来はベストなベルギー風グラタンにしようと思ったのだけど、面倒になって思いついたのがこの料理。

アンディーブを少量のチキンストックでブレゼし、クリームとロックフォールを最後に煮詰めてからめた。アンディーブのほろ苦さとロックフォールの癖が良く合う。肉料理の付け合わせにとてもいい。

Jumbo Gyoza
















This is my very first time to make "Gyoza" from its skin.  It was actually not that difficult to make the dough and the result was so much greater than using the already made ones, I'll continue to make this by myself from now on.  Just like making your own pizza at home, once you find your dough recipe, and know how to make, it's not so bothering.  Yet I need to improve the shape of the each Goyza.

「手作り餃子」今回初めて皮から作ってみた。餃子の美味しさはやっぱり皮にありきと思い、重い腰をあげて作ってみた。案の定、市販の皮とは天と地の差だった!今回は「もちもち餃子」を作ろうと思っていたので、皮も厚めで大振りに作った。生の皮は滑りやすく、絞り目がバラバラになってしまった。しかも手慣れていないので10個で精一杯。

肉も上等で脂身のおいしい豚肉を用意し、キャベツ、ニラ、生姜のみじん切りを塩揉みして加えた。味付けは塩、胡椒、紹興酒、ごま油のみ。フライパンに油をひき、水溶き小麦粉を注いで羽根つきになるように焼いていく。最後は少量のごま油を回す。

もちもちで外はカリカリの餃子が出来た。大きく作ったので、小龍包と餃子の間のようで食べごたえのあるものになった。皮を噛んだら、中身もジュワッと肉汁が溢れ出てきて大満足。多分、よい豚肉を使ったのが美味しさの決めてだったと思う。

Filet de Porc braiser a la confiture d'orange


This is pork filet braised with "Marmalade" and vinegar.  Pork goes very well with fruit flavor and sweetness.  I like this dish in Asian flavor too, braising with soya sauce with marmalade.  This is good to make in "le creuset" to cover the pot.  First I braised the pork with vinegar, red wine and fond de veau, then add marmalade towards the end of the cooking because the marmalade is easy to be burned.

Mash potato is a perfect side for this dish.  I think pure of pumpkin or sweet potato also goes well. For that night I coordinated the plates in wine red color theme so I made tomato and aubergine gratin, yet I wish I could found autumn vegetables.

「豚フィレのマーマレードブレゼ」これはうちの母がよくスペアリブのマーマレード焼きを作るのでそれを参考にした料理。豚とマーマレードはよく合うコンビネーションだと思うが、フランス料理でマーマレードを料理に使うことはあまりないような気がする。そういえば、「鴨のオレンジ風」という有名な料理があるが、オレンジジュースを使う。マーマレードを醤油で割るとアジア風になるので、赤ワイン、ヴィネガー、フォンドヴォーで味を調整した。

さっぱりとした豚のフィレ肉にこの甘くて濃厚なソースは良く合う。付け合わせはマッシュポテトがよい。本当はマッシュポテトにさつまいものピュレを混ぜようと思っていたのだけど、日本のさつまいもがとても高かったので、諦めた。その他は、その日の料理のテーマ「ボルドー色」に合わせてトマトと茄子のさっぱりグラタンを作ったが、もう少し秋色を出した料理にしたかった。
