Tori gobou Nabe


This is hot pot is made from "Soba" noodle stock.  Since I'm a big fan of soba noodle, I thought I could make a hot pot out of the soba stock.  We use dark soya sauce with dried bonito and other dried fish stock for soba.  I added chicken balls, tofu, gobou and shungiku.  Everything matched very well together, yet I thought that I could make the meat balls from duck rather than the chicken.

鰹出汁とそば出汁のベースの「鶏ごぼう鍋」を作った。香港も急に寒くなり、鍋の美味しい季節になった。実は私は「しゃぶしゃぶ」は大好きだが、それ以外の鍋料理はあまり好きでない。湯豆腐も好きだが、ここでは美味しい豆腐が無い。ということで、大好きなそばの出汁で鍋料理を創作してみた。

先ず鰹の出汁をとり、濃縮のそば出汁、酒、醤油を加えた。ごぼうのささがきを加えて煮立てると、辛口の醤油と鰹のきりっとした匂いとごぼうの香りが立ちこめる。この香りだけでも酒が一杯飲めるくらいいい。それに鶏団子、豆腐、春菊を加えた。さっぱりしてとても美味しい鍋になったが、鴨肉で作ったらどれだけ美味しかっただろう!「鴨ネギ鍋」で最後はそばでしめるというような粋なクリスマスはいかが?

Lagman

























"Lagman" is home made noodle from middle Asia such as; Kazakhstan, Kyrgyz, Tajikistan, Turkmenistan, and Uzbekistan.  I made this out of Japanese Udon that is already made.

This is basically a soup of beef, carrots, tomato, and chick beans with noodles.  I also added some spices such as coriander powder and sweet pepper from Spain.  Usually, Japanese udon has soup that is made from dried kelp and fish.  This is a nice variation of the dish for those who don't like fish stock.

「ラグマン」とは中央アジア辺りで食されている手延べうどん。市販の冷凍うどんを使ってちょっと変わったうどんを作ってみた。本式では羊などで作られるのだと思うが、牛肉を使用した。

基本的には牛肉、人参、トマト、ひよこ豆(缶)を炒め、ビーフストックを足したスープを作る。コリアンダーシード、スィートパプリカなどのオリエンタルなスパイスを加え、冷凍うどんを入れた。夫は昆布やかつお出汁の日本の普通のうどんよりこっちが好みだったようで絶賛していた。

Couronne de Noel
















I've started to take "flower arrangement lessons" recently since I found this teacher who had learned about flowers in France.  She has a great style that I love, and I was very happy with the outcome of this Christmas wreath lesson.  I learned the basic composition of the "wreath" making.  I also think it's important to pick the leaves and the materials that can create harmony and to express your style and taste.

最近「フラワーアレンジメント」のレッスンを受け始めた。フランスで修行をされた先生で、彼女のお花のスタイル/センスがとても素敵で感動して習い始めた。今回は2回目で「クリスマスリース」今年のクリスマスはフランスで過ごすので、フランスまで持って行けるような、ドライになっても大丈夫そうな素材でというお願いをして材料を選んでもらった。

赤い実と白い藻のコントラストがクリスマスらしくて可愛らしいのに、ドライな物も合わさって、ナチュラルで大人な感じに仕上がって我ながら大満足!!(半分以上先生にやってもらったが)今までお花は教本などを参考に独学の自己流でやっていたが、何かが足りないことにイラダチを感じていた。やっぱり習わないと分からないことは多々あるものだと納得。

Following my previous posts, I picked some main dish suggestions that I think they can be suitable for the Christmas dinner course.  I think "Roast Chicken" or "Roast duck" would be perfect choice but I don't have nice photos of those.  I added category of "Theme Dinner" on my blog. I hope it'll help composing your own course.

Christmas Dinner suggestions for starters

Christmas is coming.  Have you plan your dinner for this year yet?  Meaning of Christmas is very different from Japanese to Christian countries.  From my observations, western people usually cook traditional plates such as roasted meat and gratins for side dishes for Christmas dinner.

For Japanese, since Japan is not a Christian country, the day is not a holiday.  Christmas is just a fashion and commercial promotion, something like Valentine's Day and an occasion for kids to get gifts.  Many restaurants create special dinner course for couples.  Also many people buy so called "Christmas cakes" and fried chicken.  

These are the dishes I made before in each different occasions.  I've posted my suggestions of "Red and Green" theme starters.  I thought they might be good idea for Christmas dinners.

皆様はクリスマスをどの様に過ごされるのでしょうか?日本ではなぜかクリスマス=ロマンチックで商業的な要素が強く、正月前の忙しい時期なので家族で大々的にディナーをすることは少ないかもしれない。キリスト教の国では大体クリスマス=日本の正月で家族が集まってお祝いする。

私の印象ではアメリカでは11月の感謝祭とあまり変わらないような七面鳥や鶏のロースト料理とポテトのグラタンなどをする家庭が多い様子。フランスでは前菜にフォアグラを頂くのが定番のようだ。肉料理はわりと自由に鴨、子羊、その他のジビエなどその年によって選んでいるようだ。

「赤と緑」の色のテーマでクリスマスディナーの提案になりそうな料理ををいくつかピックアップしてみた。それぞれは過去に別々の機会に作ったもの。

Tai no Shiokonbu Ae

























This is "Sea beam" sashimi marinated with salted kelp.  Sea beam is considered one of the most delicate fish and it's great to eat as sashimi.  Yet I don't have access to very fresh fish here in Hong Kong, I add some flavour and some acid for the so-so-fresh quality to be safe.  When you add some lemon juice or some other acidity, it'll cook the row fish meat.  Therefore, you have to add them right before you eat.

 Japanese regularly eat sashimi at home.  We consider it important to eat sashimi with "Wasabi" because it has the effect of killing germs.  It's also better to have them with drinking Sake.  This might be an excuse of a Sake drinker but alcohol also kills germs.

「鯛の塩昆布和え」は昆布締めの適当版な和え物。トビコがあったので一緒にまぶした。鯛の刺身を短冊切りにして塩昆布で和えておき、直前にレモンを搾った。

Pasta variation -XO Jan


"XO sauce" is originated in Hong Kong in modern cuisine.  I often make pasta dish with Japanese flavor using Soya sauce and I tried Chinese version this time.  Saute of thing sliced pork strips and boiled Chinese watercress seasoned with XO sauce and Oyster sauce.  I actually loved this combination.  I found that I like using the Italian pasta rather than Chinese noodles for its texture.


XO醤を使って「中華風パスタ」なるものを作ってみた。XO醤とは香港生まれの「食べるラー油」みたいなもの。干し貝柱が大量に入っている少し高価なものなので、香り付けに使うといい。豚肉の薄切り、マッシュルーム、クレソンの塩ゆでを炒めてXO醤を加え、中華スープと少量のオイスターソースで味付けした。

中華麺については私は最近「半生麺」があまり好きでない。ラーメン、チャンポン麺、中華麺などの「半生麺」は安定剤だか防腐剤だか薬っぽい匂いがすることがある感じがして控えるようになった。(日清の焼きそばだけは美味しいけど)乾麺の方が麺のこしもあるし、パスタはセモリナ粉と水のみで作られているので安心。それだけで食べても美味しいので、最近は「そば、うどん、春雨、ビーフン」以外の麺料理は何でもパスタになりつつある。

Salade de saumon et avocat


This is very simple salad of salmon and avocado.  I drizzled "parsley sauce" which I had made for another occasion but I thought this is a great idea for simple salad like this one.  It can make a nice presentation and bring up the flavor.  I think it can be with basil sauce as well.  I also prepared normal "sauce vinaigrette" on the side.

「サーモンとアボカドのサラダ」これはベビーリーフミックスにサーモンとアボカドを列べた簡単サラダ。これにその前日に作って余った「パセリソース」をたらした。サラダにこんなハーブのソースをたらすのも見た目が映え、香りが良くなりいいアイディアだと思った。

パスタによく使うバジルのソースなども時々サラダに使うのもいいだろう。パセリソースには酢を加えていないので、普通のヴィネグレットドレッシングも用意した。パセリなどの青物に酢やレモンを加えると途端に変色するのでご注意を。

Sardine cake


This is something like "crab cake" made by sardine.  I added saute of chopped garlic, onion, bell pepper and fennel inside. You can replace fennel with celery.  Fillet the sardines, remove skin and the bones and ground in food processor.

With the fish meat, mix the above saute of vegetables, add 1/2 of egg and some bread crumbs. Season with salt and pepper and shape into flat balls as the photo.  Cover the cake with bead crumbs again then saute in the olive oil.

「イワシのハンバーグ」これはイワシでアメリカ料理の「クラブケーキ」風なものを作ってみた。先ず、イワシをおろして皮を取り、フードプロセッサーで軽く挽く。にんにく、タマネギ、パプリカ、フェンネルのみじん切りをオリーブオイルで炒める。フェンネルの代わりにセロリでもよいし、その他もネギなど家にあるものでもよいと思う。

イワシのすり身と冷ました野菜、溶いた卵を半分(魚がベースだど水っぽくなるので量は調節する)、パン粉を加えて形を作る。更に外側にパン粉をまぶし、オリーブオイルでソテーする。

Sesame Chicken


I've found this dish in the U.S. Chinese restaurant.  There are many of Chinese take outs in New York, and most of the restaurant have this dish. It's usually very sweet.  I think this is one of the western original Chinese dish something like "Chicken teriyaki".  I made something similar to it but in Japanese method.  

First to flour the chicken thigh and deep fry in the oil.  Prepare the mixture of Soya sauce, sake, mirin and sugar in small pot and bring them to boil.  After chickens are done, soak them into the sauce.

セサミチキン」はアメリカのチャイニーズテイクアウトレストランには必ずある料理。中華料理というよりアメリカンチャイニーズ料理だと思う。ソースはとても甘いので、私は和風にアレンジしてみた。

鶏もも肉を唐揚げ大に切り、小麦粉をはたいて油で揚げる。一方で醤油、酒、みりん、砂糖のタレを作って一煮立ちさせる。若干甘めの方がよいと思う。鶏が揚がったらタレに漬ける。最後に胡麻をたっぷりふりかける。

タレの味が濃いので、鶏に塩こしょうをする必要はないと思う。普通の唐揚げに飽きたらこれもいい。鶏のジューシーさとタレの甘辛さが白ご飯に良く合う。

Hijiki fried rice

























Hijiki is a kind of Japanese seaweed that Japanese people eat regularly at home with rice.

For this fried rice, saute a small portion of bacon first then add cherry tomatoes and hijiki.  Then add already cooked rice and fry well.  Season with soya sauce, pinch of balsamic vinegar and chicken powder.

「ひじきの炒めご飯」はひじきをたっぷり使った少し洋風?な創作料理。オリーブオイルで少量のベーコンを炒めてカラッとなったら、チェリートマトと戻したひじきを加えて炒める。ご飯を投入して更に炒め、醤油、バルサミコ酢、チキンコンソメ、塩こしょうで味付けする。雑穀米などで作っても美味しいと思う。

Family Dinner 2



In Japan, food imports are limited by the law so it's difficult to find imported meat for home consumption.  Veal is one thing, and I cooked "Iberico pork chop" today.  I've started to see this pork at city super recently and I found this is really the best pork in the world.  This taste better than lambs or even beef.  The meat is tender and delicate and even the fat is extremely tasty.

For the starter, I made the salad with Aubergine that my mother brought from Japan.  This kind can be eaten in fresh.

日本の家庭ではなかなか手に入らない材料での家庭料理ということで、前回の「子牛」に引き続き、今日は「イベリコ豚」。少し前からシティースーパーに置いてあるようになった「イベリコ豚」は料理してみて、その美味しさに仰天した!この豚の美味しさはすごい。世界一美味しい豚だと思う。身はかなり赤くて柔らかく、羊や牛肉より美味しい。脂身まで甘くて香りが良く、美味しく頂ける。鹿児島の黒豚も美味しいが、こちらには負ける。

前菜には母が持ってきた「生で食べられる茄子」を使ったサラダを作った。

I had my parents from Japan this week.  I composed the light French menu with the main dish with veal since veal is not available for home cooking in Japan.

Kiriboshi Daikon to Toriteba no Suppani


"Kiriboshi Daikon" means dried radish strips and these are well know Japanese preservative food.  We use this to make small vegetable side dishes, but it can also added to this type of strew dish.  Fresh Japanese radish has certain bitterness and it take while to cook them through.  Thought if you used dried radish, it can be cooked quickly.

「切り干し大根と鶏手羽のすっぱ煮」これは包丁要らず、煮崩れ心配無しの超簡単煮物。私は鶏手羽を食べ易くする為に、ほろほろになるまで長く煮込む。ルクルゼで鶏手羽の外側を油で軽く炒める。酒、出汁、黒酢、みりん、醤油、乾燥椎茸、切り干し大根を入れて一旦一煮立ちさせ、灰汁を取り、蓋を閉めて弱火で1時間超煮込む。後半は蓋をずらして水分を飛ばす。

乾燥椎茸もルクルゼで蓋をして煮込めば完全に戻る。切り干し大根と干し椎茸の乾物の香ばしさが、少し生臭味がある手羽元によく合うと思う。手羽先でもよいと思う。これに厚揚げを入れてもいいだろう。キッチンに長く立ちたくない時は、仕込んで1時間後に出来ているこんな料理がいい。
