Shabu Shabu Salad


Shabu Shabu is a famous Japanese hot pot.  Very thinly sliced meat which is usually beef, sometimes pork, cooked in two seconds in boiling kombu stock.  This is my favorite hot pot type of dish but it's too hot to eat hot pot at this season so I arranged as salad which is also common style of Shabu Shabu in Japan.

Usually, there are two types of dipping sauce; Ponzu(combination Japanese citron, dashi and soya sauce) with grated Daikon radish, and sesame sauce.  This is thin sliced beef cooked two seconds in boiling water then cooled.

「しゃぶしゃぶサラダ」急に暑くなった時に作ったしゃぶしゃぶサラダ。いつもは胡麻ダレを使うことが多いが、今回はさっぱりと大根おろしとポン酢で頂いた。牛肉のしゃぶしゃぶは本当に2秒で仕上げると美味しく出来る。(豚の場合はきちんと火を通す)肉が未だ赤いまま引き上げ、しばらく置くと余熱で火が通る。水にさらしたりせずそのまま冷ます。
