Shungiku pesto chicken pasta


This green sauce is made from Shungiku which is common leaf vegetable/herb in Asia.  I made the pesto sauce with this because I really like the flavor.  I boiled the vegetable first then processed in food processor with garlic and olive oil.  You can do the same thing with spinach.

「春菊ジェネベーゼ・チキンパスタ」私は春菊の香りが好きで、よくつけ野菜などにも使う。香港ではほうれん草と春菊は冬にしか出ないので、楽しみにしている。このパスタソースは春菊を柔らかく茹でて、にんにくと一緒にフードプロセッサーにかけ、オリーブオイルを加えたもの。鶏の胸肉のソテーをのせたのは、一品料理に仕上げたため。
