Fillet de porc au pomme vert

I love the green apple "Granny smith" which is very sour apple.  I like to use them for dessert but goes very well with pork.  I made a comport de pomme without sugar but with small amount of salt first.  Then rolled apple comport with bacon.

「豚フィレのグリーンアップルソース」これはリンゴを使った創作料理。グラニースミスは酸味が強く、甘みが少ないので豚肉との相性もよい。とても美味しく出来たが、もう少し改善してもよいかもしれない。
