Dried seafoods market



In Sheung Wan district of Hong Kong, there are many shops of dried foods.  In Cantonese cuisine, dried sea foods are essential of ingredients of the taste.  Dried scallops are probably the most appreciated and commonly used ingredient of the stock here yet there are expensive.

I've found it's strange to find that the quality ones are mostly Japanese scallops from north of Japan.  Yet Japanese people hardly use scallops for the stocks.  I think most of the Japanese scallops are exported to Hong Kong.

「上環の乾物街」広東料理は何かしら乾物を使う料理。海の物から漢方薬のようなものまで、香港には様々な乾物が売られている。海産物だけでもおそらく100件以上の店が並ぶ。

椎茸、ほたて、エビ、牡蠣などは使い方もわかるが、その他にも目を見張るほど多くの種類の乾物があり、魚の浮き袋など一体どのようなものなのかわからないものが山ほどある。写真の店は貝柱が多いが、その他フカヒレ、アワビ、ナマコなどの専門店がある。
