Eye round steak with aubergine

Lean steak with aubergine is a great combination.  Eye round is very lean meat, it's better for health but it lacks bit of something.  I sauteed aubergine with small amount of olive oil with garlic.  Laying slices of aubergine with steak slices one by one looks pretty on the plate but also adds much more flavor to the meat.

「アイ・ラウンドと茄子のステーキ」アイラウンドは赤身の脂肪が無い部位の肉だ。柔らかい肉ではないが、火を上手に通せば美味しく頂ける。さっぱりした肉に茄子のソテーを合わせてみた。茄子の風味と牛肉の赤身がよく合う上に、脂肪が無い肉に柔らかさがプラスされてとてもいい組み合わせだ。

茄子は少量のオリーブオイルでじっくりと火を通す。オリーブオイルで油分を賄う方が牛脂より体によさそうだ。
