Double egg stuffed mushrooms

These are tofu stuffed mushrooms.  I made tofu stuffing with dried shrimp, bacon, and spring onion and regular egg and salt egg.  Salt egg is very good seasoning for minced meat in general but I tried with tofu but it worked really well.  Topping is XO sauce.

「２種卵のキノコの豆腐詰め」鴨の塩漬け卵は中華では一般的な調味料で、茹でてみじん切りしたたものを油で炒め物のソースにしたり、生を豚ひき肉に混ぜて蒸したりする。見た目は下の写真の通りで、灰に包まれてあり、それを洗ったものが右上の白い卵。

固めの豆腐に戻した乾燥エビ、ベーコンのみじん切り、小葱などを入れて、普通の卵と塩卵を入れて練った。塩卵を使うと粘りとコクが出る。ポーテベロマッシュルームに詰めて上にXO醬を乗せてオーブンで焼いた。なかなかいい出来だった。
