Petit salé aux chou




I've pre made "petit salé"; salt pork myself. Salt marinated pork shoulder is cooked in water with vegetables until it becomes tender. I happened to have a good cabbage from Australia, I cooked the cabbage with the soup made out of salt pork.  It became a dish similar to "Choucroute" with fresh cabbage.

「塩豚とキャベツの煮込み」塩豚は豚の肩肉を2日ほど塩漬けにして、野菜と一緒に茹でたものを作っておいた。これはその出汁にキャベツをさっと煮たもの。キャベツが美味しかったので異常に美味しく感じた。たっぷりとマスタードを付けて頂く。シュークルートのキャベツが生の様な料理。
