Shio saba & Kohada
Kohada is a small fish similar to the sardine that is one of the popular toppings of sushi. Fish is very small so it takes time to prepare; to fillet, salt it and marinate it in vinegar. For the first time, I've tried to make the one as real sushi bar because I've found a bag full of Kohada sold for 100 yen.
I've tried making marinated kohada as I saw in the youtube. It took some time but it was not very difficult and I was extremely satisfied with the result! It was as good as I had them in the sushi bar.
「コハダ寿司」帰国してすぐの頃、まだあまり寒くなかった頃に買ったコハダと鯖が非常に美味しかった。コハダは30匹くらい入った袋が100円で売られていたので、即買い。コハダの酢締めは初めて挑戦してみたが、YouTubeの動画を見ながら意外と簡単にできた。数が多いので、面倒だが難しくはない。
1日目は刺身で食べて、2日目には寿司にした。コハダは酢が回るのが早いので、1日目が美味しかったが、2日目は酢飯によく合う。鯖も脂が乗ってとても美味しかった。
