Japanese Knife

My mother has some Japanese knives and some of them are very old.  Yet she doesn't sharpen the knives by herself.  Japanese knives are the best but it requires maintenance so it's difficult to handle them.

Kitchen maintenance

Because I was away from my home kitchen I needed to shin & sharpen all my tools.  Silver wears are easy to be shine these days since I've found the dip but the copper and the knifes take time..  it took me more than half day.

5D Mark IV

We renewed our camera recently to 5D Mark IV.  It has so many functions and got so much better than our last one Mark II.  I'm very excited.

Japanese knife sharpening stones

If you have a good knife you also need to know how to sharpen it.  It takes some times to be able to sharpen the knife properly.  I've been doing it with knowledge that I've leaned from the book.

According to the above book, professional shaper need three levels of stones.  I've been sharpening with two stones for long time but I bought the last one #6000 for the first time.  It cost about 5000 yen so it's not a cheap tool.  I hope my knifes become sharper than ever with my practice.

Since I went to learn Japanese professional cooking school this summer, I couldn't help adding some Japanese cooking tools to my kitchen ware collections.  I have tremendous amount of French cooking wares already now with Japanese and Chinese cooking tools, I have no space to store..

My Japanese knives

Each time I go back Japan, I bring back my Japanese knives to professional sharpener.  In my thought, I can never cook fish properly without Japanese fish knives.  I've started my cuisine training in French kitchen so I have full set of professional French chef knives but for the fish I prefer using Japanese knifes.

Japanese knifes are made with steel but different mix of iron compares to stainless steel.  It can be extremely sharp but also it can be easy to get rusty with humidity.  I can sharpen my knifes with stones regularly but I bring them to professional to time to time.  Look how shinny they became!
