Sanma no Kabayaki
"Sanma" is very popular seasonal fish in autumn of Japan. They are caught northern to eastern part of Japan. Since they swim down from northern pacific ocean to near Hokkaido in this season, we call it's the autumn fish. This fish is the symbol of reasonable and tasty fish and everyone loves in Japan, yet I've heard of the news that fisherman couldn't fine them for a while this year because of unusual hot summer. This year the price went up much higher than normal years.
If they are fresh, it's very good to eat them Sashimi. Otherwise, people usually lightly salt the fish and grill them. In it's high season, the fish is fat and has delicate flavor. They are similar to Sardines but has much more refine and delicate flavor.
「さんまの梅味噌蒲焼き」今年は秋刀魚が獲れないというニュースをよく聞いた。先日香港「そごう」で今年の生秋刀魚が一匹1000円程で売られていた。少し迷ったけど、いつもの2匹で400円の冷凍物でいいかと諦めた。
独りで頂く時は大きなキャセロールにさんまを入れてそのままオーブンで焼いて食べるのだが、夫は骨が苦手なので、おろして蒲焼き風にした。フライパンで焼いて最後に梅肉を味噌を酒で溶いたものを塗って仕上げた。
