Japanese knife sharpening stones
If you have a good knife you also need to know how to sharpen it. It takes some times to be able to sharpen the knife properly. I've been doing it with knowledge that I've leaned from the book.
According to the above book, professional shaper need three levels of stones. I've been sharpening with two stones for long time but I bought the last one #6000 for the first time. It cost about 5000 yen so it's not a cheap tool. I hope my knifes become sharper than ever with my practice.
「砥石」私は今まで2つの砥石、荒目の天草天然石とキングの1000番で包丁を研いでいたが、今回大阪の道具屋筋の堺包丁の店で仕上げの6000番を買ってきた。6000番代の砥石は安いものがなく、無難な上写真のもので5000円。これからもっとよく包丁を研いで料理したい。
