Shichuan pepper corns are one of the Japanese seasonal delicacy because they're available only this time of the year. We use them as a spices for certain food. I used it for dried small fish and marinated in soya sauce for later use.
「山椒仕事」山椒は一回湯がいて胡麻油で炒めたものをちりめん山椒に。残りは醤油とみりんで炊いて後に鮎の甘露煮に使おうと思っている。
