We had plenty of Ume plums last year from our garden but not this year. Apparently, the plums grew only every two years. For this year's plums, I bought them from a supermarket. There are many things you can do as preservatives. For this year, I've made Miso, and sugar marinated one to develop the taste in a year.
「今年の梅仕事」今年はうちの庭の梅は生り年ではなかったので、購入して梅仕込み。去年は初めて梅干しを作ってみたが市販の赤シソが塩が多すぎて全体的に塩辛くなり過ぎた。
今年は梅干しはお休み。コンポート、梅味噌、茶梅を仕込んだ。茶梅とは塩漬けして梅酢を出した後に砂糖漬けにする台湾の梅の楽しみ方だそうで、たまたまNHKの今日の料理を見て美味しそうだったので急遽作ってみることにした。数ヶ月後が楽しみ。
