Furofuki Daikon

 

Furofuki daikon is Japanese radish cooked in dashi.  It's a rather difficult dish to make because you need to have good dashi stock and it has to be stew a long hour in order to make the radish soft however using a pressure cooker solves the problem.

「ふろふき大根」大根をたくさん頂いたのでふろふき大根にしてみた。昆布の出汁をとる間に圧力鍋の弱火で15分くらい炊く。それから出汁に薄口と味醂を入れた八方でコトコト炊く。

味噌は作り置きしている玉味噌を酒と味醂で解いたもの。日本料理勤めでこんな料理のコツも分かるようになってきた。
