Fried shrimps with snow peas











This is very simple Chinese home dish.  First to remove a vein by cutting the back of the shrimp.  Then clean the shrimps with salt and some starch. Wash the shrimps with water then dry with paper towel.  Marine the shrimps in sake or chinese wine, salt and potato starch for 10 to 20 min.  On the other hand, boil snow peas in salted water and drain them well.  Fry the shrimps with oil.  Use the oil little more than usual amount.  Once shrimps are cooked remove from the pan.  Reduce the oil from pan, saute minced garlic and ginger then add snow peas and season with chinese stock or salt.  Add back the shrimps in the end.

「エビとさやえんどうの塩炒め」エビは背わたを除いて塩と片栗粉で揉んで汚れを落とす。水で洗ってペーパータオルで水気をとる。酒か紹興酒、塩、片栗粉で下味を付けてしばらく置く。さやえんどうは一度塩ゆでしておく。多めの油でエビを炒め、火が通ったら取り出す。その油を減らし、にんにくと生姜のみじん切りを炒めてさやえんどうを入れてサッと回し、塩か中華だしで味付けする。今回私は中華だしの代わりに塩昆布を少々入れた。最後にエビを戻して全体をまとめる。
