Chicken fillet cutlet with aubergine




I've never made cutlet with chicken fillet but I realized that this is very nice.  I pounded the chicken fillets with meat pounder to flatten them.  It's very easy to fry with small amont of oil because they are thinner than chicken breast.  I made many at the same time and used for sandwich the next day.

「ささみのカツレツとなすのソテー」これはささみを肉タタキでたたいて平たくしたもの。ささみのカツレツは厚みが無いので揚げることが簡単。薄いので油切れもよくカラッと仕上がる。沢山作って翌日にはサンドイッチにした。
