Garlic Fava beans
Fava beans are one of my favorit vegetable in Japan. I think the season is over now but large Japanese fava beans are so delicious. In Hong Kong I can only buy the frozen beans. The flavor is almost gone but I still like.
For the frozen beans you can season them as you like. Sometimes I cook with cream but this time I cooked as Taiwanese way. boil them first then lightly saute with minced garlic with sesame oil.
「空豆のガーリック炒め」これは冷凍空豆を使った料理。香港には空豆がないので、冷凍のものを時々買っている。冷凍品はイギリスやオーストラリアなどのものが多く、豆が小振りで香りも低い。日本の空豆は香りが高いので、塩ゆでだけでも美味しいが、こちらは一手間加える。クリームで煮込んでも美味しいが、今回は一旦茹でて解凍したものを、ニンニクとごま油で炒めた。少し塩を強めに味付けする。
