Japanese Knife

My mother has some Japanese knives and some of them are very old.  Yet she doesn't sharpen the knives by herself.  Japanese knives are the best but it requires maintenance so it's difficult to handle them.

「和包丁」母は結構良い包丁を持っているのに自分で研がないので、包丁研ぎをした。いつも刃物屋に研ぎに出しているが、柳刃などは刺身を引く毎に研がなければいけないので、自分で研ぎ方を身につけるしか包丁を使いこなす術がない。私も素人だが、やっていればなんとかなる。
