Tsuji Cooking school Japanese cuisine - 1

My speciality is French cuisine but it was extremely interesting to learn professional Japanese cuisine.  I've learned about its philosophy and brief technique at Tsuji culinary school in Osaka for Japanese cooking training this summer for five days.

I'm familiar with Japanese cooking because it's my culture but the professional training far different and difficult from home cooking.  It was absolutely eye opening experience for me.

The first day is to take Japanese broth: dashi and how to fillet a simple fish.  Also the way to grill fish in grill.
