This is Kumamoto style of regional soba noodles with soup. In this region, the soba soup is light colour compares to the one in Kanto region. Personally, I don't really like my region style of soba but I love Shinshu soba. Yet this is one of the most popular shops in Kumamoto.
「肥後そば」そば「中の森」のそば。熊本の汁そばは汁が白く、そばが細い。うどんの出汁とは少し違うが、おそらくカツオと昆布などの出汁と薄口醤油、味醂でほんのり甘い。これはこれで美味しいが、私は個人的には、そばに歯ごたえがあり、汁が濃い色で、酸味がある信州や関東風が断然に好きだ。
