Twice cooked pork with aubergine

This is deep fried small aubergines with sweet bean paste.  I cooked in the method of "Twice cooked pork" of Chinese dish.  Though because I used the pork cooked too much for this dish, it broken as I fried it in a wok..

「回鍋肉ナス」回鍋肉とは肉を二回料理したという意味。豚肉を煮込んだものをスライスして中華鍋の鍋肌で焼き、甘辛の味噌だれを回しかける。普通はきゃべつを使うがナスがあったので、素揚げしたナスを加えた。

先日の塩豚を使ったので、豚が柔らかすぎて崩れてしまった。味は美味しかったがキャベツの本格的なものをまた作ろうと思う。
