This is one of my favorite fried noodle. It's simple but very tasty. I alway buy Taiwanese "新竹" mee hoon for this dish. It's important to let the noodle soak up the stock when you fry the noodle.
「台湾ビーフン」新竹ビーフンを買っておいたので、久しぶりにビーフンを作った。たっぷり中華出汁を含ませながら炒めるのがこつ。新竹ビーフンはヒキがあってとても美味しい。他の産地のものでは代用不可だ。
