Chou farci
Chou; Cabbage in Asia is very different from the one in Europe. Asian cabbage is softer and the ones in Hong Kong are very small compares to the one from Japan. I found this very small spring cabbages so I stuffed the stuffing made from ground pork and mushrooms inside.
Normally, you have to boil the leaves in advance but I didn't do it this time because they were very soft. I just removed the stems from the bottom and stuffed the meat directly and tide them with strings. Then cooked in chicken stock with bacon and tomato.
「キャベツのファルシ」キャベツには色々と種類があるようだ。フランスには主に普通っぽいキャベツ(白キャベツ)とちりめんキャベツの2種類のキャベツがある。ちりめんキャベツは見た目は日本のものとかなり違うが味は似ている。白キャベツは包丁が立たない程固い。香港のキャベツは日本のものの4/1くらいの大きさのものが多い。
げんこつ大の春キャベツを見つけたので豚挽肉とマッシュルームの詰め物をした。キャベツの葉が柔らかかったので、下茹でせずに芯を切り抜き直接肉を詰め、ひもで縛って煮込んだ。煮込みのソースはベーコン、生トマトとチキンストック。
