"Chawanmushi" is steamed egg custard with shrimp, shitake mushrooms, chicken and other ingredients. This is very traditional Japanese dish. It's very important to make its consistency almost as a liquid and steamed perfectly.
「茶碗蒸し」海老と椎茸の茶碗蒸しを作った。三つ葉も銀杏もないので小さめに湯のみに入れて蒸した。茶碗蒸しを上手に蒸し上げるコツは蒸し器のふたを完全に閉めないこと。
