Chicken Teriyaki


I think "Chicken Teriyaki" is one of the most known Japanese dish in overseas.  On the other hand, this is not the popular dish between Japanese people.  I think we prefer Japanese style of fried chicken "Karaage" or "Hambergu" much more than this.

This dish has to be made with chicken thigh with skin.  The sauce is mix of  mirin, sugar and soya sauce.

「鶏の照り焼き」海外では寿司と同じくらいよく知られた和食の代表が「チキンテリヤキ」。だが、日本では唐揚げやハンバーグほどポピュラーな料理ではないと思う。こればかりは絶対に鶏もも肉で作らないと美味しくないだろう。しっかり皮目を焼いてこってり味にと仕上げるのが私流。
