Black cod - Saikyo Yaki

 



It's very rare to find this fish in our region but one day I've found this at the local supermarket near me.  It's known to be marinated in Saikyo Miso is the best way to have this fish because the fish is very oily.

I salted it first then marinated it in sweet white miso.  Then cooked it in the oven in low fire because it's very easy to be burn.

「銀鱈の西京焼」1月のある日、近所のスーパーになんとギンダラが出ていた。小さなスーパーだがたまに物凄いものを出す所なのだ。早速塩をして、西京味噌に漬け込んだ。とても焦げやすいので焼くのは弱火で。脂が多い身の魚だがとても美味しかった。
