This is one of my specialities when I was teaching French cooking. It's a chicken breast poached in the chicken stock with so-called "supreme" sauce. It's been a while since I made this but still an excellent dish.
「鶏のスプリームソース」この料理は私が料理教室をしていた時の私のスペシャリティーの一つ。胸肉をポシェしたものにスプリームソースというものを添えたもの。久しぶりに作ってみた。今回新しいテクニックを取り入れて新レシピを考案した。
