Agi no Tataki -Somen age


"Somen" is very thin Japanese noodle.  I crushed the noodle to make the crust of fish balls.  The fish balls are made from "Agi".  This fish tastes similar to sardine, but much more delicate.

Filet the fish and chopped into "tartar".  Then season the fish with light soya sauce and add some minced ginger and spring onions.  Shape the tartar in small balls, then cover with the "Somen" noodles.  Fry the fish balls in the oil until it cooks.  

「鯵のたたきの素麺揚げ」素麺衣はチャチャッと出来るし、食感もよくて魚にはぴったり。鯵はやっぱり刺身や生のたたき、塩焼きが美味しいと思うが、ここでは冷凍ものだったので、揚げ物にした。

鯵をおろしてたたき、生姜とネギのみじん切りを加える。薄口醤油、少量の酒で味付けして練る。少量の片栗粉でつなぎ、形を作って素麺を全体にまぶす。適温の油でさっと揚げる。
