"Touchi" is Chinese seasoning. I think the Chinese would say "douchi". These are fermented black beans and they are great seasonings for stir fry.
I added prosciutto to bean sprouts for the taste and flavour. It's important to use a good wok and very strong gas to cook Chinese dishes. You have to prepare everything on your hands before putting anything in the wok, then fry them very very quickly.
「もやしと生ハムの豆豉炒め」野菜の炒め物に豆豉を使うと、こくが出てとても美味しい。今のアパートのガス台が中国仕様で、かなりガスが強い。また中華鍋をガッチリ掴んで、ガスがよくあたるように出来ているので、欧米の器機より高さが高い。気のせいか、一気に私の中華料理の腕が上がった感じがする。
