Shishamo to Okura no nanbanzuke
Shishamo is semi dried small fish similar to herring. I deep fired them and marinated with vinegar based dashi sauce with vegetables.
「ししゃもとオクラの南蛮漬け」ししゃもは軽く小麦粉をつけて揚げ、オクラは素揚げにして南蛮だしに漬け込む。出汁は夏なので、酢が多め。
