This is a salad mixed with saute of marinated chicken. Marinade is made with ground ginger, sake, light sauce, potato starch. This is common marinade method of Chinese cooking but I used Japanese ingredients this time. Potato starch or corn starch make the meat texture tender. Dressing is mix of soya sauce and sesame oil.
「ジンジャーチキンサラダ」鶏の胸肉をそぎ切りし、生姜のすりおろし、酒、白だし、片栗粉にしばらく漬け、オリーブオイルでソテーした。ドレッシングは醤油を出汁で割りごま油を加えたもの。最後にレモンを搾る。何処にでもある材料で出来る夏のサラダ。
