Shiokoji Chicken satay


Chicken satay is thai style of yakitori marinated with peanuts sauce.  It's usually sweet so I changed it to Japanese style.  Shiokoji is one of the traditional Japanese seasoning that is recently became very popular.  Though once you marinate meat or fish in Shiokoji, it's very easy to be burn before the meat cook through.  That is the reason I sliced the chicken breast thinly and skewered in sticks.  I also added lemon juice for the marinade.

「鶏の塩麹サテ」サテとはタイ料理でピーナッツソースに漬けた鶏肉の焼き鳥。何となく見た目が似ているので、そう名付けてみた。塩麹に漬けた肉はとても焦げ易いので、薄切りにするのがコツ。

鶏の胸肉を縦にスライスし、塩麹、酒、レモン汁に漬ける。フライパンで焼き、好みのスパイスをかけてピタパンを一緒に用意すると、写真のような中東料理っぽいものになる。柚子胡椒などと一緒に和風のおかずとして頂いても美味しい。
