Takana egg rice



Takana mean mustard leaves.  This is a speciality of Aso mountain in Kumamoto.  Mustard leaves came from Taiwan to Kumamoto but the taste of pickles is different from Taiwanese style.  It tastes more sour and salty but this goes very well with rice.

Becaues I made fried rice with black rice inside, Takana leaves are not very visual.  I mixed with scramble eggs.

「高菜たまごご飯」ご飯に黒米を入れて炊いたので、高菜があまり見えなくなったが、高菜と炒り卵をまぶしたご飯。阿蘇の名産の高菜漬けはご飯にまぶすととても美味しい。高菜は元々中国の野菜で、台湾から九州に渡ってきたそうだ。

阿蘇の高菜漬けは台湾や中華圏のものより酸っぱく塩辛い。だが、モチモチした阿蘇の米によく合う。お皿も熊本の小代焼き。
