Sanma is very popular fish in Japan. I can find imported fish from Japan even in Hong Kong. Sanma is very difficult to keep it's freshness so they are usually frozen.
These are deep fried fish balls. I made the mixture of the fish with spring onion, minced ginger, flour, sake, salt. Shape the paste in balls with spoon then deep fried them in oil.
「秋刀魚の揚げボール」冷凍の秋刀魚は一手間加えると美味しくなる。これはおろした秋刀魚を小骨も一緒にフードプロセッサーで挽いたものに、小ねぎ、生姜のみじん切り、小麦粉、酒、塩を加えて油で揚げたもの。
