Rice cooked with potatoes sounds a bit strange but this is one of regional Chinese dish. I think the original dish is cooked with deep dried potatoes. I didn't fry the potatoes but cooked with chicken stock. It's good to use new potatoes so that they add slight stickiness to thai rice. I really like this combination.
「ポテトライス」これは雲南?あたりの中国の地方料理。本来は揚げたジャガイモを加えてご飯を炊くようだ。私はイモは生のまま米と一緒に鶏の出汁で炊いた。イモは新じゃがやメークインのような、硬くて粘り気が強いものを使う。ポロポロしたタイ米に粘り気が加わってとても美味しい。
