Shrimp with broccoli
This is one of very known American Chinese dish. I was ordering this dish very often when I was there. I realized that in Hong Kong or authentic Chinese cooking, they hardly use broccoli.
This is rather simple if you have Chinese soup. First to marinate shrimps in sake, salt and potato starch. Boil broccoli in water but not to over cook. In frying pan, with small amount of oil saute shrimps. Once shrimps are cooked, add boiled broccoli and pour small amont of Chinese soup. Toss everything together and cook about one or two minuts.
「海老とブロッコリー」これはアメリカにいた時によく食べていたアメリカンチャイニーズの一つ。香港や中国本土ではブロッコリーを中華料理に使う事はあまりないが、これは簡単でとても美味しいと思う。
海老の背に少し深めに切り目を入れる。酒、塩、片栗粉に漬けておく。ブロッコリーは固ゆでにする。フライパンに油をひき海老を炒める。火が通ったらブロッコリーを加えて、中華だしを注ぐ。全体が馴染んだら完成。
