I made this dish while ago when I cooked veal roast. Veal is very popular meat in France therefore there are many typical ways to cook them. This is one of the know veal dish with Russian influence.
I think that the original recipe is to roast veal with cheese but I made bechamel sauce with mushrooms and cooked in the oven.
「子牛のオオロフ」これは子牛のローストの料理の後日に作ったもの。オオロフとはロシア風の子牛料理の名前で、チーズやハムを肉の上に乗せて焼いたもの。これはキノコのベシャメルソースをのせて焼いてみた。子牛はさっぱりとした淡白な肉なので、クリームソースなどのこってりしたものがよく合う。
