Nikumiso & Aubergine rice



This is mixed rice bowl of pork seasoned with few Chinese pastes and olive oil sauteed aubergine.  I really liked this small aubergine I bought from Indian market which had distinctive aubergine taste.  I've realized that this one has firm texture that it doesn't absorb too much oil.

「肉味噌となすのご飯」インド街で買った茄子は硬いのであまり油を吸わない。オリーブオイルで炒めて蓋をして蒸し炒めにして煮崩れないところがいい。茄子は塩味だけで楽しむために、あえて肉を合わせずに料理した。肉味噌は甜麺醤、豆板醤、豆豉醬など中華の醬をいくつか合わせたもの。さっぱりさせるために薬味を多めに盛った。
