Nikujaga is Japanese way of potato with beef cooked in Soya sauce and sugar. I make this with less sugar and use bit of Shiro dashi, mirin, sake and soya sauce. This type of home cooking tastes varies very much from home to home and by regions. Some likes it to make sweeter some makes with more soya sauce.
肉じゃがというより、ジャガイモのそぼろ煮だが、面倒なので英語タイトルは肉じゃがにした。甘いおかずが好きでないので、私流は白だしをほんの少し使い、みりん、酒、醤油のみ。
