Tuna for sashimi is usually a frozen block of tuna so the quality of freshness is good in Singapore as well. Though I like to marinate it soya sauce called "Zuke" to match with fusion style of sauce. The sauce is made with egg yolk, rice vinegar and white soya sauce.
「マグロの漬け・黄味ソース」シンガポールでもマグロは冷凍なので日本と変わらなく美味しい。これは簡単に醤油だけで漬けにしたものに卵の黄味、寿司酢、出汁醤油などを加えたエモリュションソースを合わせたもの。
