Pork stuffed aubergines

These small aubergines are from Indian market.  Whenever I want to eat good aubergines, I go to vegetables shops near Tikka market where varieties of aubergiens are so fresh and delicious.  I stuffed small aubergines with gound pork with garlic and cooked in the oven with some tomatoes and tomato sauce.

「ナスの豚肉詰め焼き」ナスが食べたくなったらインド街の八百屋に行く。ナス、トマトやその他のインドの野菜がとても新鮮で美味しい。ナスはインド原産の野菜である故か、インド街にはいつも数種類の新鮮なナスが売られている。

この小ぶりのナスは味が濃くて美味しい。豚挽肉ににんにくとエシャロットのみじん切りを混ぜて、切り目を入れたナスに詰めてトマトと一緒にオーブンで焼いた。ナスは予めフライパンでオリーブオイルで全体を焼いて、トマトソースを敷いたオーブンざらに並べた。
