Sardine in Sansho



Sansho is a pepper-like spice exist mainly in Japan that has numbing sensation.  The seeds are only available in this time of the season.  I cooked in the olive oil with sansho seeds this time.

「鰯の山椒オイル煮」オイルサーディンに山椒の実を入れて炊いてみた。山椒の実はアク抜きして使った。残りは塩漬けにした。山椒オイルはパスタや炒め物など何にでも使えそう。
