Hiyashi Chuka
This is cold noodle with salad called "Hiyashi chuka" means "Cold Chinese". I think this is very much a Japanese dish, probably nothing to do with Chinese cuisine since Chinese people hardly eat raw and cold foods.
Yet this cold noodle is very popular in summer and usually served in Chinese restaurants in Japan. The noodle is egg noodle which usually used for Ramen and the sauce is mix of rice vinegar, sugar and soya sauce.
「冷やし中華」これは少し前、猛暑の中で作った料理。甘酸っぱいタレの冷やし中華が急に食べたくなった。考えてみると「冷やし中華」という名前自体もなんだか意味不明だ。中華料理は、基本的に生ものや、冷やして頂く料理があまりないので、日本で独自に発展したフージョン料理だと思う。
麺はラーメン用の卵生麺を使用し、タレは米酢、砂糖、醤油、ごま油を合わせたもの。この日はこの一品料理だったので、トッピングはたっぷり。
