Ye mein

This is one of the common local noodles.  It sold at noodle speciality shop because they're freshly deep fried.  It very tasty with any sauce but it's famous to serve with lobster.  I tired this with small crabs this time.


「伊麵」これは香港料理の麺の一種。油で揚げてあるので、麺自体が美味しい。麺の専門店でなければ買えないが、油も古い匂いはしなくとても美味しかった。一度湯通ししてから使う。この麺の料理では伊勢海老と一緒に絡めるのが知られているが、蟹で作ってみた。
