13th to 15th August is Japanse Obon which is a Buddist custom to honour spirits of one's ancestries. Families get together to have dinner or lunch but it's said to eat vegetarian dishes. "Nishime" is one of the typical Obon dishes for us.
It's not very easy to make this dish because it's better to cook each vegetable separately. It takes so many pots and plenty of dashi.
