This is fried tofu with vegetables insides. Hiryozu is something you buy the already made ones from tofu shops in Japan but I think it's much better to make at home. However this is very difficult to make. It requires a lot of techniques to make this perfectly. I need to practice more.
「飛龍頭」私は飛龍頭が大好きで何度か自作したことがあるが、これがとても手がかかる上になかなか難しい。豆腐を絞り、具に下味を付け、豆腐をすりつぶして材料をまとめて低温から20分程かけてじっくり揚げる。揚げたら直ぐに油抜きをする。自分で作ると野菜をたっぷり入れられるが、とても崩れ易くなる。
